He also draws on practical knowledge gained from years spent cooking in professional kitchens and the nightly challenge of feeding a family whose needs run the gamut from gluten intolerance to vegetarian to purely meat-and-potato eaters.

Known to full-on obsess over food, Jim dives into the history and origins of recipes and illustrates the never-ending possibilities of reinventing dishes.
