How do I thicken chowder for a creamier texture?
If your chowder is leaning more light and brothy than thick and creamy, you can add a little more cream or milk and simmer until slightly reduced, or thicken it with a cornstarch slurry. For the cornstarch slurry, whisk together 1 tablespoon each of cornstarch and cold water in a separate small bowl. Slowly pour the slurry into the pot of chowder while whisking. Simmer for a few minutes to activate the cornstarch. If the chowder is still too thin, add more cornstarch slurry.
Are there vegetarian chowder recipes?
Traditionally, chowder often included salt pork, but it’s not mandatory, and there are many delicious vegetarian chowder recipes. We have recipes for chowders with broccoli and cheese, corn, beans and even quinoa. Additionally, some of our other vegetable-forward chowders can easily be made vegetarian by using vegetable broth instead of chicken broth and omitting bacon.
