No-Bake Pies FAQ

What is a no-bake pie?

A no-bake pie is a chilled or frozen pie that doesn’t require an oven. Usually, no-bake pie recipes call for a premade or homemade graham cracker or cookie crust, so there’s no complicated lattice pie crust work required. No-bake pie fillings often include instant pudding, frozen whipped topping or ice cream, which set in the refrigerator or freezer. While they’re quick to put together, they usually need to chill for a few hours or overnight, so make sure to plan accordingly.

How do I keep a no-bake pie crust from becoming soggy?

Most store-bought, no-bake pie crusts, like a graham cracker crust, are solid shells that keep all your ingredients intact without making the pie soggy. You can also spread a layer of melted chocolate over a crumb crust to create a protective barrier between the filling and the crust. In general, however, no-bake pies still taste delicious after a few days in the fridge, even as the crust gets a bit soggier with each passing day as it absorbs the filling. No-bake pies are a bit like trifle recipes in that way!

Can I freeze no-bake pies?

Plenty of our favorite no-bake pies can be stored in the freezer or are meant to set in the freezer, like ice cream pies. However, various chilled pie fillings will freeze differently depending on what they’re made of. If the filling is mainly pudding or gelatin-based, it will not freeze well and may become watery after defrosting. Chilled cream pies also tend not to freeze well because the dairy content causes texture changes.
