Alex Bala’s Easy Homemade Soft Pretzels
Ingredients
- 1-1/2 cups warm water (110° to 115°)
- 1 package (2-1/4 teaspoons) active dry yeast
- 1 tablespoon packed brown sugar
- 1 tablespoon unsalted butter, melted and cooled
- 1 teaspoon salt
- 3-3/4 cups all-purpose flour, plus additional for kneading
- baking soda boil:
- 9 cups water
- 1/2 cup baking soda
- egg wash:
- 1 large egg
- 2 tablespoons whole milk
- toppings:
- Pretzel or kosher salt
- 4 tablespoons butter, melted
- 1/2 cup cinnamon sugar
- 2 cups shredded mozzarella cheese
- 1 package sliced pepperoni
- 4 hot dogs
- 2 tablespoons sesame seeds
Directions
- In a stand mixer, stir together warm water and yeast; let stand until foamy, 4-5 minutes. Add brown sugar, melted butter and salt; mix to combine. Add flour gradually, stirring to combine. Using a dough hook, mix on low until dough comes together, 1-2 minutes. Increase speed to medium and mix for 5 minutes. Place in a greased bowl, turning once to grease the top. Cover and let rest 10 minutes.
- Preheat oven to 400°. Punch down dough. Turn onto a lightly floured surface; divide and shape into 8 pieces. Roll into a 15-in. rope; shape into classic pretzel twist.
- In a Dutch oven, bring water and baking soda to a boil. Drop pretzels, one at a time, into boiling water, top side down. Cook for 30 seconds. Remove with a slotted spoon to parchment-lined baking sheets.
- In a small bowl, whisk egg and milk. Brush over pretzels and sprinkle with salt. Bake until golden brown, 12-15 minutes.
- For cinnamon sugar pretzels, brush baked pretzels with melted butter. Drop into cinnamon sugar and toss to coat.
- For pizza pretzels, brush shaped pretzels with egg wash. Top with shredded mozzarella and pepperoni before baking.
- For pretzel dogs, wrap pretzel dough around hot dogs. Brush with egg wash, sprinkle with sesame seeds and salt before baking.
