Directions
Step 1: Prep the base
Preheat the oven to 375°F.
In a large saucepan, combine the brown sugar, granulated sugar, ground cinnamon, ground nutmeg, 3/4 cup water and lemon juice. Stir to combine.
Step 2: Add the apples

Stir the peeled, cored and chopped apples into the mixture. Bring the mixture to a boil over high heat.
Step 3: Let simmer
Then, reduce the heat to medium-low, cover and let simmer until the apples are tender, 15 to 20 minutes.
Step 4: Thicken the apple pie dip

Remove 1/4 cup apple cooking liquid to a bowl. Stir in the cornstarch and 1 tablespoon water until smooth. Transfer the mixture back to the apples and stir.

Continue cooking and stirring over medium-low heat until the mixture thickens, four to five minutes.
Step 5: Prep the cinnamon chips

Meanwhile, stir together the granulated sugar and ground cinnamon for the cinnamon chips. Spray both sides of each flour tortilla with cooking spray and sprinkle with the cinnamon-sugar mixture. Cut the tortillas into triangles and place them on a greased baking sheet.
