Bacon Aioli

Once you learn how to make bacon aioli, you won't be able to stop thinking of fun and exciting ways to use it.

Ingredients

  • 4 thick-sliced bacon strips (about 3-1/2 ounces), chopped
  • 2 cups mayonnaise
  • 2 teaspoons lemon juice
  • 1 garlic clove
  • 1/8 teaspoon paprika
  • Minced chives, optional

Directions

  1. In a large skillet, cook bacon over medium heat until crisp. Remove to paper towels to drain. Reserve drippings (about 1 tablespoon).
  2. In a blender or food processor, combine remaining ingredients and reserved bacon grease until smooth. Add bacon; pulse until finely chopped. Refrigerate up to one week. If desired, top with chives before serving.
