Bacon Jam

This sweet and smoky bacon jam has a hint of maple and a bit of balsamic acidity, making it ideal for burgers, toast, cheese boards and more.
Ingredients
- 1 tablespoon butter
- 1-1/2 pounds maple-flavored bacon strips, chopped
- 4 large onions, chopped
- 1 teaspoon dried thyme
- 1-1/2 cups packed brown sugar
- 1/2 cup balsamic vinegar
- 2 tablespoons honey
Directions
- In a large pot, melt butter over medium heat. Add bacon, cook until crisp, 6-8 minutes. Remove with a slotted spoon. Add onions to the same pot; cook until onions are tender, 10-12 minutes.
- Add cooked bacon, brown sugar, salt, pepper and thyme; cook until sugar has dissolved. Stir in balsamic vinegar; bring to a boil. Reduce heat; simmer until most of the liquid has evaporated, stirring occasionally, 45-50 minutes.
- Stir in honey. Serve warm or refrigerate leftovers.
