Sweet potatoes: The orange flesh of sweet potatoes is an excellent source of vitamins and fiber. These versatile root vegetables are great for a variety of recipes, including pies, soups and, of course, chips! For this sweet potato crispy chips recipe, you will need two medium-sized sweet potatoes (not yams!).
Cooking spray: A light coat of cooking spray is all you need to bake these sweet potato chips in the oven.
Seasonings: These sweet potato crispy chips are simply seasoned with dried herbs, including rosemary and parsley, garlic salt, paprika, ground mustard and white pepper.

Step 1: Prep the potatoes

Preheat the oven to 400°F. Cut the peeled sweet potatoes into 1/8-inch slices.

Step 2: Season the potatoes

In a large bowl, mix the rosemary, parsley, garlic salt, paprika, ground mustard and white pepper. Add the potatoes and toss gently to coat.

Recipe Variations
Keep it simple: Although our recipe calls for several herbs and spices, you could also make more classic baked sweet potato crispy chips by skipping the seasonings and sprinkling them with coarse sea salt.
Add a little spice: If you prefer sweet potato chips with some heat, season them with smoked paprika, crushed red pepper, cumin, turmeric or curry powder.

These sweet potato chips in the oven won’t be quite as crispy as fried sweet potato chips or regular homemade potato chips. However, you can try cutting thinner slices if you prefer them that way. Remember that they will crisp up faster in the oven and burn easily, so you’ll have to watch them closely as they bake.
