BLT Guacamole

The savory flavors and crunch of a classic BLT sandwich are combined with creamy avocados to make tasty BLT guacamole.

Ingredients

  • 4 bacon strips
  • 3 medium ripe avocado, peeled
  • 1/4 cup finely chopped red onion
  • 2 tablespoons lime juice
  • 2 tablespoons minced fresh cilantro
  • 1/4 teaspoon garlic powder
  • Salt and pepper to taste
  • 1 cup finely chopped romaine
  • 1/2 cup quartered grape tomatoes

Directions

  1. Heat a large skillet over medium-high heat. Add bacon; cook until crispy, 3-4 minutes per side. Transfer to a paper towel-lined plate; let cool. Roughly chop; set aside.
  2. Place avocados in a large bowl; mash with a fork until creamy. Stir in red onion, cilantro, lime juice and garlic powder until combined. Season with salt and pepper to taste.
  3. Fold in romaine lettuce, tomatoes and chopped bacon. Serve immediately.
