- Eggs: Three eggs help create that custardy, fudgy texture in the brownie filling. If you have a fourth egg, save it for an egg wash for the pie crust.
- Corn syrup: Light corn syrup also helps make the brownie filling gooey, fudgy and “set.”
- Sugar: We’ll add a little more sweetness to the filling with granulated sugar.
- Pie shell: To keep this brownie pie recipe quick and easy, buy a premade pie crust shell from the grocery store. They’re available in the frozen section.
- Semisweet chocolate chips: All the best brownie recipes have semisweet chocolate chips studded throughout the batter, and this brownie pie filling is no different.
Directions
Step 1: Melt the chocolate and butter

Preheat the oven to 350°F. In a microwave, melt the unsweetened chocolate and butter. Stir them together until they’re smooth. Allow the mixture to cool slightly.

Melt the chocolate and butter in the bowl until smooth. Be sure the water doesn’t touch the bottom of the bowl or it will burn the chocolate.
Step 2: Make the brownie filling

In a large bowl, use a hand mixer or stand mixer to beat the eggs, corn syrup, sugar and salt until smooth. Switch to a rubber spatula and stir in the vanilla extract and melted chocolate mixture.

Pour the brownie filling into the pastry shell. Sprinkle the top with semisweet chocolate chips.
