Caesar Smashed Potatoes

Baked with Parmesan cheese and a garlicky, creamy dressing, these Caesar smashed potatoes are hard to resist.
Ingredients
- 1-1/2 pounds baby potatoes
- 1-1/2 cups grated Parmesan cheese, divided
- 1/2 cup creamy Caesar salad dressing, divided, plus more for serving
- 3/4 cup panko breadcrumbs
- 2 tablespoons butter, melted
- Salt and pepper to taste
Directions
- Place potatoes in a large stock pot; cover with water. Bring to a boil; cook until fork-tender, about 15 minutes. Drain; set aside.
- Preheat the oven to 425°. Line a 15x10x1-in. baking sheet with parchment paper or foil; generously coat with cooking spray. Sprinkle 1 cup grated Parmesan cheese over the baking sheet. Arrange the potatoes on top of the cheese, leaving space between each potato.
- Press down on each potato with the bottom of a drinking glass until flattened. Brush 1/4 cup Caesar dressing over the surface of the smashed potatoes. Bake 16-18 minutes or until the tops of the potatoes are lightly browned and the cheese is melted.
- Meanwhile, in a small bowl, stir together bread crumbs, melted butter, the remaining 1/2 cup grated Parmesan cheese, salt and pepper.
- Remove potatoes from the oven. Brush with the remaining 1/4 cup Caesar dressing. Sprinkle the tops with the bread crumb mixture.
- Bake another 5-7 minutes or until the bread crumb mixture is golden brown. Serve hot with extra Caesar dressing on the side for dipping or drizzling.
