When your countertop is overflowing with ripe tomatoes, this recipe for sauteed cherry tomatoes and mozzarella is just the thing to make. Fresh tomatoes and creamy mozz combine with sauteed shallots, garlic and thyme for a flavorful side.

When you have a bumper crop of cherry tomatoes, it can be hard to keep up. While freezing tomatoes and canning tomatoes are always options, the flavor of a freshly picked tomato really can’t be beat. Though it may feature simple ingredients, this recipe for sauteed cherry tomatoes and mozzarella makes a sophisticated and versatile side dish packed with freshness—and it will use up some of your bounty.

Cherry Tomatoes and Mozzarella Ingredients

  • Olive oil
  • Shallots
  • Thyme
  • Garlic
  • Cherry tomatoes
  • Salt and pepper
  • Mozzarella cheese

Directions

Step 1: Saute the shallots, thyme and garlic

In a large skillet, heat the oil over medium-high heat. Saute the shallots with the thyme until they’re tender.

Add the minced garlic.

Cook and stir until fragrant, about one minute.

Step 2: Add the tomatoes

Stir in the tomatoes, salt and pepper.

Continue cooking until they’re heated through.

Step 3: Finish with the cheese

Remove the pan from the heat and stir in the cheese.

How to Store Cherry Tomatoes and Mozzarella

Store any leftover sauteed cherry tomatoes and mozzarella in an airtight container in the refrigerator. For the best flavor and texture, eat the leftovers within three days of making the dish.

This delicious summer side dish pairs well with all your barbecue favorites—think grilled chicken, grilled pork chops or steak kabobs. It also pairs well with classic Italian dishes, including chicken piccata, lasagna and eggplant Parmesan.

How else can you use sauteed cherry tomatoes and mozzarella?

These flavorful tomatoes make an easy topping for bruschetta—simply spoon the cherry tomatoes and mozzarella over toasted baguette slices. Try the mixture as a simple rustic sauce for pasta, or spoon it over grilled meats, such as pork or chicken, to add even more flavor. Or, use the tomato-mozzarella combo as a breakfast topping over a grain salad bowl or scrambled eggs.

What else can you add to sauteed cherry tomatoes and mozzarella?

For added crunch, top the dish with a tablespoon of toasted pine nuts. You could add more fresh herb flavor by topping the tomatoes and mozz with chopped fresh basil just before serving, or stir in 1 to 2 tablespoons of basil pesto.

You might also drizzle the dish with a balsamic glaze (yum). To make the glaze, mix together 1 cup balsamic vinegar and 1 tablespoon sugar in a small saucepan. Bring that to a boil, then reduce the heat and simmer, uncovered, until reduced to 1/3 cup.

  • 2 teaspoons olive oil
  • 1/4 cup chopped shallots
  • 1 teaspoon minced fresh thyme
  • 1 garlic clove, minced
  • 2-1/2 cups cherry tomatoes, halved
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper
  • 4 ounces fresh mozzarella cheese, cut into 1/2-inch cubes

Directions

  1. In a large skillet, heat oil over medium-high heat; saute shallots with thyme until tender. Add garlic; cook and stir 1 minute. Stir in tomatoes, salt and pepper; heat through. Remove from heat; stir in cheese.
