Chickpea Blondies

Soft, buttery and packed with cozy vanilla flavor, chickpea blondies are a sweet protein-packed surprise hiding in plain sight.
Ingredients
- 1 can (16 ounces) garbanzo beans or chickpeas, rinsed and drained
- 1/2 cup maple syrup
- 1/2 cup almond butter
- 1/2 cup vanilla almond milk
- 1 teaspoon vanilla extract
- 1-1/2 cups all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1/4 teaspoon baking soda
- 1 cup semisweet chocolate chips
Directions
- Place first 5 ingredients into a food processor or high-powered blender, process until smooth. Transfer to a large bowl.
- In another bowl, whisk the flour, baking powder, salt and baking soda; add to chickpea mixture. Stir in chocolate chips.
- Spread mixture into a greased 8-in. baking pan. Bake at 350° until a toothpick inserted in the center comes out clean, 25-30 minutes. Cool on a wire rack. Cut into bars.
