Chocolate-Dipped Orange Cookies

Ingredients

  • 1 cup butter, softened
  • 1 package (8 ounces) cream cheese, softened
  • 1 cup sugar
  • 1/2 teaspoon salt
  • 2 tablespoons grated orange zest
  • 1/2 teaspoon vanilla extract
  • 2-1/2 cups all-purpose flour
  • 1 cup finely chopped blanched almonds
  • glaze:
    • 5 ounces semisweet chocolate, chopped
    • 3 tablespoons butter
    • 1/4 cup finely chopped blanched almonds

Directions

  1. Preheat oven to 325°. In a large bowl, beat butter, cream cheese, sugar and salt until blended. Beat in orange zest and vanilla. Gradually beat in flour. Stir in almonds.
  2. Shape dough into 1-in. balls; place 2 in. apart on ungreased baking sheets. Flatten with bottom of a glass dipped in sugar.
  3. Bake until firm, 20-25 minutes. Remove from pans to wire racks to cool completely.
  4. For glaze, in a microwave, melt chocolate and butter; stir until smooth. Dip each cookie halfway in chocolate; allow excess to drip off. Sprinkle with almonds. Place on waxed paper; let stand until set.
