These easy coffee cake muffins bake up with high domes topped with streusel and a fragrant vanilla glaze.
Ingredients
- STREUSEL:
- 3/4 cup all-purpose flour
- 1/4 cup packed brown sugar
- 2 tablespoons sugar
- 1/2 teaspoon ground cinnamon
- 1/8 teaspoon salt
- 1/4 cup butter, melted
- BATTER:
- 1/4 cup packed brown sugar
- 1 teaspoon ground cinnamon
- 1-1/2 cups all-purpose flour
- 2 teaspoons baking powder
- 1/4 teaspoon baking soda
- 1/4 teaspoon salt
- 1/3 cup butter
- 1/2 cup sugar
- 1 large egg, room temperature
- 3/4 cup 2% milk
- GLAZE:
- 1/2 cup confectioners' sugar
- 1 tablespoon 2% milk
- 1/2 teaspoon clear vanilla extract
Directions
- Preheat oven to 400°. In a small bowl, combine flour, sugars, cinnamon and salt. Stir in butter just until combined. Refrigerate until firm.
- In a small bowl, combine brown sugar and cinnamon; set aside. In another small bowl, whisk flour, baking powder, baking soda and salt; set aside.
- In a large bowl, cream butter and sugar until light and fluffy. Add egg until combined. Gradually add dry mixture alternatively with milk.
- Spoon 1 tablespoon batter into each of the 12 paper-lined muffin cups. Top each with 1 teaspoon cinnamon sugar mixture and about 2 tablespoons batter. Top with chilled streusel.
- Bake until a toothpick inserted in center comes out clean, 16-18 minutes. Cool for 5 minutes before removing from pan to a wire rack.
- Combine glaze ingredients; drizzle over muffins. Serve warm.
