Copycat Bounty Chocolate Bites

Bounty is a coconut-filled chocolate bar made by Mars. These copycat chocolate bites take that same concept and mold them into bite-sized pieces with one exception: graham crackers! They add a bit of sweetness and texture to the chewy treat. —Francine Lizotte, Langley, British Columbia

Ingredients

  • 2 cups sweetened shredded coconut
  • 1 cup graham cracker crumbs
  • 2/3 cup sweetened condensed milk
  • 1/2 cup butter, melted
  • 1/4 cup confectioners' sugar
  • 1 tablespoon coconut oil
  • 1/2 teaspoon vanilla extract
  • 1/8 teaspoon salt
  • 12 ounces dark chocolate candy coating

Directions

  1. Place first eight ingredients in a food processor; pulse until blended. Spread mixture into a 24-square silicone mold. Freeze until firm, about 1 hour.
  2. Alternatively, press coconut mixture into an 8x8-in. parchment lined square pan. Cut into 1-in. squares.
  3. In a microwave, melt candy coating; stir until smooth. Dip coconut squares in chocolate; allow excess to drip off. Place on a waxed paper-lined sheet; refrigerate until set. Store in an airtight container.
