Copycat Sweet Kale Salad

This copycat sweet kale salad is the homemade version of everyone's favorite packaged salad mix from the supermarket.

Ingredients

  • 1/4 cup plus 2 tablespoons mayonnaise
  • 3 tablespoons sugar
  • 2 tablespoons sour cream
  • 2 tablespoons 2% milk
  • 1 tablespoon cider vinegar
  • 2 teaspoons poppy seeds
  • SALAD:
  • 4 cups finely chopped Tuscan or Lacinato kale
  • 1 cup broccoli coleslaw mix
  • 1 cup shredded fresh Brussels sprouts
  • 3/4 cup shredded cabbage
  • 3/4 cup shredded radicchio leaves
  • 1/2 cup dried cranberries
  • 1/2 cup roasted pepitas

Directions

  1. Place mayonnaise, sugar, sour cream, milk and vinegar in the bowl of a food processor; pulse until smooth and creamy. Transfer to a glass jar; stir in poppy seeds. Set aside.
  2. In a large serving bowl, combine kale, broccoli slaw, Brussels sprouts, cabbage and radicchio. Toss with half the dressing. Sprinkle the dried cranberries and pepitas over the salad; toss gently. Serve with remaining dressing.
