Cottage Cheese Bagels

The secret ingredient to easy, fluffy homemade bagels is cottage cheese. Make a batch of these cottage cheese bagels in under an hour for a perfect breakfast staple or afternoon snack.

Ingredients

  • 1-1/2 cups 4% cottage cheese
  • 1-1/2 cups plus 3 tablespoons self-rising flour + more for kneading
  • 1 large egg, room temperature
  • 1/2 cup shredded Asiago cheese

Directions

  1. Preheat the oven to 350°. Line a 15x10x1-in. baking sheet with parchment paper; set aside.
  2. In a food processor or blender, puree cottage cheese until smooth.
  3. In a large bowl, combine cottage cheese and flour until a crumbly dough forms. Knead the dough until it pulls away from the sides of the bowl.
  4. Transfer dough to a floured surface; continue kneading until smooth. Divide the dough into 6 equal-sized balls; roll each until smooth. Using your fingers, create a hole in the center of each ball, about 1-1/2 in. wide. Place on the prepared baking sheet.
  5. In a small bowl, beat egg with a fork. Brush the top of each bagel with egg; sprinkle with shredded cheese. Bake until lightly browned, 25-27 minutes. Let cool about 5 minutes.
