Creamy Apricot Stuffed Dates

Ingredients

  • 1/2 cup chopped dried apricots
  • 3 tablespoons cream cheese, softened
  • 1 tablespoon orange marmalade
  • 1 tablespoon boiling water
  • 1/4 teaspoon almond extract
  • 2 tablespoons slivered almonds, toasted and finely chopped
  • 20 each pitted dates

Directions

  1. Place first five ingredients in a bowl of a food processor fitted with blade attachment; pulse until smooth.
  2. Carefully make a slit in the center of each date; fill with cream cheese mixture. Sprinkle with almonds. Serve immediately; refrigerate leftovers.
