Crispy Norwegian Bows

Ingredients

  • 3 large egg yolks, room temperature
  • 3 tablespoons sugar
  • 3 tablespoons heavy whipping cream
  • 1/2 teaspoon ground cardamom
  • 1 to 1-1/4 cups all-purpose flour
  • Oil for deep-fat frying
  • Confectioners' sugar

Directions

  1. Beat egg yolks and granulated sugar until pale yellow. Add cream and cardamom; mix well. Gradually add flour until dough is firm enough to roll.
  2. On a lightly floured surface, roll into a 15-in. square. Using a pastry wheel or knife, cut into 10 strips, each 1-1/2-in. wide. Cut each strip diagonally into 6 shorter strips, each 2-1/2 in. long. In the center of each shorter strip, make a 1-in. vertical slit. Pull 1 end through slit to make a bow.
  3. In an electric skillet or deep-fat fryer, heat oil to 375°. Fry bows, a few at a time, until golden brown on both sides, 20-40 seconds. Drain on paper towels. Dust with confectioners' sugar.
