Self-rising flour- More than 1 cup

As a substitute for each cup of self-rising flour, place 1-1/2 teaspoons baking powder and 1/2 teaspoon salt in a measuring cup. Add all-purpose flour to measure 1 cup.

Easy Blueberry Muffins

Ingredients

  • 3 cups self-rising flour
  • 1-1/2 cups sugar
  • 1 cup buttermilk
  • 1/2 cup canola oil
  • 2 large eggs, lightly beaten
  • 2 cups fresh or frozen blueberries

Directions

  1. In a large bowl, combine the flour and sugar. In another bowl, combine the buttermilk, oil and eggs. Stir into dry ingredients just until moistened. Stir in blueberries.
  2. Fill greased or paper-lined muffin cups two-thirds full. Bake at 400° for 14-18 minutes or until golden brown and a toothpick inserted in the center comes out clean. Cool for 5 minutes before removing from pans to wire racks. Serve warm.
