Elise Jesse’s Giant Super Bowl Burger
Ingredients
- burger buns:
- 2 teaspoons active dry yeast
- 1 cup warm milk (110° to 115°)
- 2 tablespoons sugar
- 1 teaspoon salt
- 3 cups all-purpose flour
- 1/4 cup olive oil
- 1 large egg, room temperature plus 1 teaspoon water
- 1 teaspoon sesame seeds
- burger sauce:
- 2 cups mayonnaise
- 1/2 cup ketchup
- 1/4 cup yellow mustard
- 1/4 cup sweet pickle relish
- 4 teaspoons sugar
- 4 teaspoons white wine vinegar
- 2 teaspoons smoked chipotle powder
- 2 teaspoons garlic powder
- 2 teaspoons onion powder
- 1-1/2 teaspoons salt
- 1 teaspoon paprika
- burger patties:
- 3 pounds ground beef
- 2 tablespoons tomato paste
- 1-1/2 teaspoons garlic powder
- 1 teaspoon salt
- 1 teaspoon ground smoked chipotle powder
- 1 teaspoon onion powder
- 1 package sliced sharp cheddar cheese
- 1 head green leaf lettuce
- 2 large beefsteak tomatoes, sliced
- 2 medium onions, sliced
- 6 to 7 thin sandwich pickle slices
Directions
- In a large bowl, dissolve yeast in warm milk. Add sugar; let stand for 5 minutes. Add the salt and enough flour to form a soft dough. Add olive oil; turn onto a floured surface.
- Knead until smooth and elastic, 3-5 minutes. Let rest 10 minutes. Shape into a large ball. Place into a greased 12-in. cast-iron skillet.
- In a small bowl, beat egg and water together; brush over dough. Sprinkle with sesame seeds. Cover and let rest for 1 hour.
- Preheat oven to 400°. Bake until golden brown, 20-25 minutes.
- Meanwhile, in a bowl, combine all sauce ingredients. Refrigerate until ready to serve.
- In a large bowl, combine ground beef, tomato paste, garlic powder, salt, chipotle powder and onion powder. Mix lightly but thoroughly. Shape into 2 large patties. Heat a large cast-iron skillet over medium-high heat. Cook patties for 8-10 minutes or until a thermometer reads 160°, turning once. Top each patty with half the cheese slices just before finishing.
- Cut bun in half, place bottom onto serving platter (if desired, toast bun in oven). Stack patties onto burger bun bottom. Top with lettuce, tomato, onion and pickles. Cut into slices to serve; secure with toothpicks if desired. Serve with burger sauce.
