Looking for a quick, healthy, flavorful dinner with minimal cleanup? This maple Dijon salmon (or "pink steak" as my kids call it) with green beans is your perfect one-pan solution. Tender salmon fillets are topped with a sweet and tangy maple-Dijon glaze and baked alongside crisp-tender green beans, making for a delicious meal that requires less than 15 minutes of hands-on time. Ingredients
- 4 salmon fillets
- Salt and pepper to taste
- 1 pound fresh green beans
- Olive oil
- 1-1/2 cups water
- 1 cup uncooked basmati rice
- MAPLE DIJON GLAZE:
- 1/4 cup pure maple syrup
- 2 tablespoons Dijon mustard
- 2 tablespoons soy sauce
- 2 tablespoons olive oil
- 3 garlic cloves, minced
- Coarsely ground pepper, to taste
Directions
- Preheat oven to 425°. Season salmon with salt and pepper. Place salmon on one half of a parchment-lined rimmed baking sheet.
- In a large bowl, toss green beans with enough oil to coat the beans and salt and pepper, to taste. Place on the other side of the baking sheet.
- Combine glaze ingredients in a small bowl. Brush over salmon filets.
- Bake until salmon reaches an internal temperature of 145°, 12-15 minutes.
- Meanwhile, rinse rice until water runs clear. Add to a small pot with 1-1/2 cups water. Add salt to taste. Over medium-high heat, bring to a boil. Reduce heat and simmer, covered, for 15 minutes. Remove lid, continue cooking 10 minutes. Fluff with a fork. Serve with salmon and beans.
