Firecracker Shrimp

Ingredients

  • 1/2 cup apricot preserves
  • 1 teaspoon canola oil
  • 1 teaspoon soy sauce
  • 1/2 teaspoon crushed red pepper flakes
  • 1 pound uncooked shrimp (25-30 per pound), peeled and deveined

Directions

  1. In a small bowl, combine the apricot preserves, oil, soy sauce and pepper flakes. Thread shrimp onto metal or soaked wooden skewers.
  2. Grill, uncovered, over medium heat or broil 4 in. from the heat until shrimp turn pink, 2-3 minutes on each side, basting frequently with apricot mixture.
