Fresh Green Bean Medley

Ingredients

  • 1 pound fresh green beans, trimmed
  • 1 small sweet red pepper, finely chopped
  • 4 green onions, chopped
  • 1/4 cup sliced fresh mushrooms
  • 1 tablespoon olive oil
  • 1 garlic clove, minced
  • 1 tablespoon sherry vinegar
  • 1/2 teaspoon dried basil
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper

Directions

  1. Place beans in a large saucepan and cover with water. Bring to a boil. Cover and cook for 4-7 minutes or until crisp-tender.
  2. Meanwhile, in a large nonstick skillet, saute the red pepper, onions and mushrooms in oil until tender. Add garlic; cook 1 minute longer. Drain beans; stir into vegetable mixture. Add the vinegar, basil, salt and pepper; heat through.
