Try this simple one pan dish!
Ingredients
- 1 cup sliced sweet onion
- 1 cup julienned green pepper
- 1 tablespoon butter
- 8 eggs, beaten
- 1 tablespoon minced fresh basil
- 1/2 teaspoon dried oregano
- 1/4 teaspoon salt
- 1/8 teaspoon pepper
- 4 whole pita breads, warmed
- 1 large tomato, sliced
- 1/2 cup crumbled feta cheese
Directions
- In a large skillet, saute onion and green pepper in butter for 3 minutes or until tender. Add the eggs, basil, oregano, salt and pepper; cook and stir over medium heat until eggs are completely set. Spoon onto pita bread. Top with tomato and cheese.
