Ingredients

  • 2 cups all-purpose flour
  • 1/4 cup sugar
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 2 large eggs, room temperature
  • 1/2 cup honey
  • 1/2 cup orange juice
  • 1/3 cup butter, melted
  • 1 teaspoon vanilla extract

Directions

  1. In a large bowl, combine the flour, sugar, baking powder, baking soda and salt; set aside. In a bowl, beat eggs. Add honey, orange juice, butter and vanilla; mix well. Stir into dry ingredients just until moistened.
  2. Fill 12 greased muffin cups two-thirds full. Bake at 375° until golden brown, 15-20 minutes.
