Horseradish Meatballs

Ingredients

  • 2 large eggs
  • 1/2 cup dry bread crumbs
  • 1/4 cup chopped green onions
  • 1 tablespoon prepared horseradish
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 1-1/2 pounds lean ground beef (90% lean)
  • 1/2 pound ground pork or ground turkey
  • sauce:
    • 1 small onion, finely chopped
    • 1/2 cup water
    • 1/2 cup chili sauce
    • 1/2 cup ketchup
    • 1/4 cup packed brown sugar
    • 1/4 cup cider vinegar
    • 1 tablespoon Worcestershire sauce
    • 1 tablespoon prepared horseradish
    • 1 garlic clove, minced
    • 1 teaspoon ground mustard
    • 1/4 teaspoon hot pepper sauce

Directions

  1. Preheat oven to 350°. Combine first 6 ingredients. Add beef and pork; mix lightly but thoroughly. Shape into 1-1/2-in. balls. Place on a greased rack in a 15x10x1-in. pan. Bake until a thermometer reads 160° (165° if using ground turkey), 35-40 minutes.
  2. Meanwhile, in a large saucepan, combine sauce ingredients; bring to a boil, stirring frequently. Reduce heat; simmer, uncovered, 10 minutes. Gently stir in meatballs.
