If using frozen blueberries, use without thawing to avoid discoloring the batter.

Kids’ Favorite Blueberry Muffins

Ingredients

  • 2-1/2 cups pancake mix
  • 1/2 cup sugar
  • 1 large egg
  • 2/3 cup water
  • 1/4 cup canola oil
  • 1-1/2 cups fresh or frozen blueberries

Directions

  1. Preheat oven to 400°. In a large bowl, combine pancake mix and sugar. In another bowl, whisk egg, water and oil. Stir into dry ingredients just until moistened. Fold in blueberries.
  2. Fill paper-lined muffin cups two-thirds full. Bake 14-16 minutes or until a toothpick inserted in center comes out clean. Cool 5 minutes before removing from pan to a wire rack.
