A hectic workweek doesn’t mean you need to rely on freezer foods or a boxed item from the pantry in order to get dinner on the table. We have plenty of day-saving 30-minute meals for when you need a meal prepped in a hurry, but still want it to be fresh and satisfying. This simple, five-ingredient recipe for lemon feta chicken does not disappoint. Thanks to bright and zesty lemon juice, tangy feta cheese and dried oregano, every bite of tender, juicy chicken is packed with flavor.

Lemon Feta Chicken Ingredients

  • Chicken breast
  • Lemon juice
  • Feta cheese
  • Dried oregano
  • Pepper

Directions

Step 1: Prep the chicken

Place the chicken in a 13×9-inch baking dish coated with cooking spray. Pour the lemon juice over the chicken and sprinkle it with the crumbled feta cheese, dried oregano and pepper.

Step 2: Bake the chicken

Bake the chicken, uncovered, at 400°F for 20 to 25 minutes or until a thermometer inserted into the thickest part reads 165°.

How to Store Lemon Feta Chicken

Leftover lemon feta chicken should be stored in an airtight container in the refrigerator. It’s best consumed within three to four days. You can also freeze leftovers. After cooling the chicken completely, transfer the leftovers to a freezer-safe container and freeze them for up to three months. Allow the chicken to thaw overnight in the refrigerator before reheating it.

Leftovers can be reheated in the microwave in a covered microwave-safe dish with a splash of water. They can also be reheated in an oven preheated to 350°. Transfer the leftovers to an oven-safe dish, add a splash of liquid and cover the dish with foil. Bake the chicken for 15 to 20 minutes, or until the internal temperature reaches 165°.

Can you use a cheese other than feta?

Crumbled goat cheese is a simple, flavorful swap for feta cheese. You could also replace the crumbled feta with four ounces of cubed halloumi.

Can you use chicken thighs to make lemon feta chicken?

You can definitely use boneless skinless chicken thighs instead of chicken breasts. You could also use bone-in, skin-on chicken if you prefer, but you should expect it to take 45 minutes to an hour to cook to an internal temperature of 165°.

What can you serve with lemon feta chicken?

Serve lemon feta chicken over orzo, couscous or rice. Side dishes that pair well with lemon dinner recipes include roasted veggies, green beans or roasted asparagus. You can lean into the Mediterranean vibes of this dish by serving it with Greek salad, pita bread, tomato feta salad or tzatziki potato salad.
