Lemon-Scented Broccolini

Ingredients

  • 2-1/2 pounds Broccolini or broccoli spears
  • 6 tablespoons butter
  • 1 tablespoon plus 1-1/2 teaspoons lemon juice
  • 1 tablespoon lemon-pepper seasoning
  • 1 teaspoon grated lemon zest
  • 1/4 teaspoon salt

Directions

  1. In a large saucepan, bring 4 cups water to a boil. Add Broccolini; cook, uncovered, until just tender, 5-7 minutes. Drain and immediately place Broccolini in ice water. Drain and pat dry.
  2. In a large skillet, melt butter. Stir in the lemon juice, lemon pepper, lemon zest and salt. Add Broccolini; toss until heated through.
