Lollipop Lamb Chops + Pistachio Pesto

Ingredients

  • 1/2 cup pistachios
  • 2 garlic cloves
  • 2 cups loosely packed basil leaves
  • 1 tablespoon lemon juice
  • 1/2 teaspoon kosher salt
  • 1/3 cup extra virgin olive oil
  • 1/4 cup grated Parmesan cheese
  • LAMB CHOPS:
  • 8 lamb rib chops (about 1 pound)
  • 1 teaspoon kosher salt
  • 1/2 teaspoon pepper
  • 1 tablespoon olive oil
  • 1/4 cup pomegranate seeds

Directions

  1. Place pistachios and garlic in a KitchenAid Food Processor; pulse until coarsely chopped. Add basil, lemon juice and salt; pulse until finely chopped. Continue processing while gradually adding oil in a steady stream. Add cheese; pulse just until blended.
  2. Sprinkle lamb chops with salt and pepper. Heat oil in a large cast iron skillet over medium heat; add lamb. Cook until desired doneness (for medium-rare, a thermometer should read 135°; medium, 140°; medium-well, 145°), 2-3 minutes on each side. Serve with basil pesto and pomegranate seeds. <br data-original-title="" title="">
