Maple Pancakes

Ingredients

  • 3 cups all-purpose flour
  • 4-1/2 teaspoons baking powder
  • 1-1/2 teaspoons salt
  • 3 large eggs, room temperature
  • 2-1/4 cups 2% milk
  • 1/3 cup canola oil
  • 3 tablespoons maple syrup
  • Optional: Additional maple syrup, butter and fresh blueberries

Directions

  1. In a large bowl, combine flour, baking powder and salt. In another bowl, whisk eggs, milk, oil and syrup; stir into dry ingredients just until blended.
  2. Preheat griddle over medium heat. Lightly grease griddle. Pour batter by 1/4 cupfuls onto griddle; cook until bubbles on top begin to pop and bottoms are golden brown. Turn; cook until second side is golden brown (pancakes will be thin). Serve with additional maple syrup, butter and blueberries as desired.
