Muffuletta Pasta Salad

This easy muffuletta pasta salad recipe combines all the flavors you love from the classic New Orleans sandwich and transforms them into a hearty pasta salad.

Ingredients

  • 8 ounces uncooked rotini pasta
  • 1 cup cubed salami
  • 1 cup cubed fully cooked ham
  • 1 cup cubed mortadella
  • 1 cup cubed part-skim mozzarella cheese
  • 1 cup cubed provolone cheese
  • 1 cup olive salad
  • 1/4 cup chopped pepperoncini
  • 1/4 cup sliced green olives with pimientos, drained
  • 1/4 cup sliced black olives
  • 1/4 cup roasted sweet red peppers, drained
  • 1/4 cup chopped red onion
  • DRESSING:
  • 1/4 cup olive oil
  • 2 tablespoons red wine vinegar
  • 1 teaspoon Cajun seasoning
  • 1/4 teaspoon garlic powder
  • 2 tablespoons minced fresh parsley

Directions

  1. Cook pasta according to package instructions. Drain; rinse with cold water. Transfer to a large serving bowl.
  2. To the bowl, add salami, ham, mortadella, mozzarella, provolone, olive salad, pepperoncini, green olives, black olives, roasted red peppers and onion; stir to combine.
  3. In a separate bowl, whisk together olive oil, red wine vinegar, Cajun seasoning and garlic powder. Toss dressing with pasta salad until combined. Cover; refrigerate at least 30 minutes. Sprinkle with parsley just before serving.
