Mushroom Gravy

This mushroom gravy is a holiday must-have, especially if you'd rather skip the fuss of pan drippings.

Ingredients

  • 3 tablespoons olive oil
  • 8 ounces sliced cremini mushrooms
  • 1/2 ounce dried porcini mushrooms, reconstituted per package directions
  • 1/2 cup finely chopped onion
  • 2 garlic cloves, minced
  • 4 tablespoons butter
  • 4 tablespoons all-purpose flour
  • 2 cups vegetable broth
  • 2 teaspoons minced fresh thyme
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper

Directions

  1. In a large skillet, heat oil over medium-high heat. Add mushrooms and onions, cook until tender and browned. Add garlic, cook 1 minute longer. Keep warm.
  2. Meanwhile, in a small saucepan, melt butter over medium-high heat. Add flour; cook, whisking continuously until the roux is light brown and no longer smells of raw flour, about 3-5 minutes. Gradually whisk in broth, bring to a simmer. Cook until thickened, 3-4 minutes. Stir in mushroom mixture, thyme, salt and pepper.
