Total Time Prep: 20 min. Bake: 15 min./batch
Yield about 1-1/2 dozen
These orange creamsicle cookies taste just like the favorite childhood treat—without having to chase down the ice cream truck.

Ingredients

  • 1 cup butter, softened
  • 3/4 cup packed brown sugar
  • 1/4 cup sugar
  • 2 large eggs, room temperature
  • 1 medium orange, zested (about 4 teaspoons)
  • 1 teaspoon vanilla extract
  • 1 teaspoon orange extract
  • 2-1/4 cups all-purpose flour
  • 1 package (3.4 ounces) instant vanilla pudding mix
  • 1 teaspoon baking soda
  • 2 cups white baking chips

Directions

  1. Preheat oven to 350°. In a large bowl, cream butter and sugars until light and fluffy, 5-7 minutes. Beat in eggs, orange zest and extracts. In another bowl, whisk flour, pudding mix and baking soda; gradually beat into creamed mixture. Stir in white baking chips.
  2. Scoop dough by 1/4 cupfuls 2-in. apart onto greased or parchment-lined baking sheets.
  3. Bake until edges are golden brown, 15-17 minutes. Remove from pans to wire racks to cool.

I tried an orange drop cookie at a Christmas party, which inspired me to make my own. With a few tweaks on a basic chocolate chip cookie recipe to highlight the flavors of orange and vanilla, these taste just like the creamsicles I loved as a kid. —Teresa Gustafson, Elkton, Maryland
