These overnight steel-cut oats are briefly simmered and then chilled for a perfect texture that stands up to any topping. Try them with chopped nuts, dried fruit or a drizzle of maple syrup.

Steel-cut oats hold their shape overnight in the fridge, soaking up liquid while staying toothsome, not mushy. That subtle bite is what sets them apart from the rolled variety, and it’s what makes a batch of overnight steel-cut oats such a smart make-ahead move.

The best part is they’re a blank canvas for all kinds of flavor combinations. Stir in mashed banana, ground cinnamon and a splash of vanilla for a breakfast that nods toward banana bread. Add a spoonful of tahini and a drizzle of honey for something nutty and savory. Mix in cocoa powder and top with frozen cherries, or fold in pumpkin puree with a pinch of cloves. Or, try a swirl of miso and a dippy egg. Once you have the base, the possibilities are endless.

Can you use quick-cooking steel-cut oats in overnight oats?

It’s not ideal to use quick-cooking steel-cut oats for overnight oats because they’re thinner and more processed, which can lead to a mushy texture after soaking. For the best results, stick with traditional steel-cut oats.

What kind of milk works best in these overnight oats?

Any kind of milk will work in overnight oats with steel-cut oats, but whole milk or an unsweetened nondairy milk gives the best balance of creaminess and flavor. Swap in coconut milk for a richer, slightly sweet result.

Do you have to cook overnight steel-cut oats before refrigerating?

Yes, cooking overnight steel-cut oats briefly before refrigerating is key. That quick simmer helps jump-start the softening process so the oats finish tender by morning.

What are the best toppings for overnight steel-cut oats?

The best toppings for steel-cut overnight oats include chopped toasted nuts, fresh or dried fruit, a drizzle of maple syrup or honey, and a sprinkle of cinnamon. You can also add a spoonful of nut butter for extra richness.
