Easy to make and packed with flavor, this pesto tortellini salad recipe is one you'll return to again and again.
Ingredients
- 1 package (19 ounces) frozen or fresh cheese tortellini
- 1-1/2 cups cherry tomatoes, halved
- 8 ounces fresh mozzarella cheese pearls
- 1/2 cup pitted Greek olives
- 4 ounces marinated quartered artichoke hearts, drained, chopped
- 2 tablespoons minced fresh basil
- 1/2 cup prepared pesto
Directions
- Cook tortellini according to package directions; drain and rinse in cold water. Transfer to a large bowl; stir in tomatoes, mozzarella, olives, artichokes, basil and pesto until combined. Cover and refrigerate until chilled, 1-2 hours.
