Pistachio Pesto

A delicious twist on the classic basil spread, Sicilian pistachio pesto has exceptional flavor and a lovely green color.

Ingredients

  • 1 cup pistachios
  • 1/2 cup grated Parmesan cheese
  • 2 garlic cloves, halved
  • 1 teaspoon salt, optional
  • 1 cup fresh basil leaves
  • 1/2 cup plus 2 tablespoons olive oil

Directions

  1. Place the pistachios, parmesan, basil, garlic and salt in a food processor; cover and process until blended. While processing, gradually add oil in a steady stream. Store in an airtight container in the refrigerator for up to 5 days or freeze for up to 1 year.
