Polish Potato Pancakes

Polish potato pancakes are a comfort food favorite. They're pan-fried until golden and crispy on the outside and soft and creamy in the center.

Ingredients

  • 4 medium potatoes
  • 1 cup finely grated onion
  • 2 tablespoons all-purpose flour
  • 2 large eggs
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • Oil for frying
  • Sour cream and minced chives, for topping

Directions

  1. Peel and finely grate potatoes. Place potatoes and onion in a large bowl; drain any liquid. Add flour, eggs, salt and pepper; mix well.
  2. In a large skillet, heat 1/4 in. oil over medium heat. Drop batter by 1/4 cupfuls; press lightly to flatten. Fry until golden brown on both sides. Garnish with sour cream and chives, if desired.
