Ingredients

  • 1 pound ground beef or turkey
  • 1 medium onion, diced
  • 1 can (14-1/2 ounces) diced tomatoes, undrained
  • 1 can (16 ounces) chili beans, undrained
  • 1 can (4 ounces) diced green chiles, undrained
  • 1 can (15-1/2 ounces) hominy, rinsed and drained
  • 1 can (16 ounces) whole kernel corn, drained
  • Salt and pepper to taste
  • 1 tablespoon cornstarch, optional
  • 1/4 cup water, optional

Directions

  1. In a skillet, cook beef and onion over medium heat until meat is no longer pink; drain. Stir in the tomatoes, beans, chiles, hominy and corn; season with salt and pepper.
  2. For a thicker stew, combine cornstarch and water, then stir into stew. Cook and stir until thickened.
