Salmon BLT Salad

Salmon wasn't one of our favorite fish until I tried it in this salad with my husband’s homegrown tomatoes. It turned us into huge salmon fans! —Anne Finch, Birmingham, Alabama
Ingredients
- 1/4 cup reduced-fat mayonnaise
- 1 green onion, chopped
- 1/2 teaspoon lemon juice
- 1/8 teaspoon dried tarragon
- 1/4 teaspoon salt
- 1/4 teaspoon pepper
- 2 (4 to 6 ounces each) salmon fillets
- 1 teaspoon olive oil
- 4 cups torn romaine
- 1 large tomato, chopped
- 3 bacon strips, cooked and crumbled
- Salt and pepper to taste
Directions
- In a small bowl, combine first 6 ingredients until well combined; set aside.
- Preheat broiler. Place salmon on a broiler pan, brush with olive oil; sprinkle with salt and pepper. Broil 3-4 in. from heat 7-9 minutes until a thermometer reads 145°.
- Divide lettuce among two plates; sprinkle with tomato and bacon. Top with 1 piece of salmon; drizzle with dressing.
