Scrumptious California Salmon

Ingredients

  • 3 garlic cloves, minced
  • 1 teaspoon minced shallot
  • 1 cup orange juice
  • 1 tablespoon balsamic vinegar
  • 3 tablespoons honey
  • 1 tablespoon ground ancho chile pepper
  • 1/4 teaspoon salt
  • 1/8 teaspoon pepper
  • 1 salmon fillet (1 pound)
  • 2 teaspoons canola oil
  • 2 tablespoons minced fresh cilantro

Directions

  1. In a small saucepan coated with cooking spray, saute garlic and shallot until tender. Add orange juice and vinegar. Bring to a boil. Reduce heat; simmer, uncovered, until reduced to 1/4 cup, 20-25 minutes. Stir in the honey, chili pepper, salt and pepper.
  2. In a large cast-iron or other ovenproof skillet, brown salmon in oil, about 3 minutes on each side. Brush with sauce. Bake, uncovered, at 400° until fish just begins to flake easily with a fork, 8-10 minutes.
  3. Brush with any remaining sauce and sprinkle with cilantro.
