Slow Cooker Option: In a greased 6-qt. slow cooker, combine all ingredients, omitting oil. Cook, covered, on low 6-8 hours, until heated through.

Spicy Chuck Wagon Beans

Ingredients

  • 1 tablespoon canola oil
  • 1 medium onion, chopped
  • 2 cans (28 ounces each) baked beans
  • 3 cans (15 ounces each) chili beans, undrained
  • 2 cans (15 ounces each) black beans, rinsed and drained
  • 2 packages (7 ounces each) frozen fully cooked breakfast sausage links, thawed and cut into 1/2-inch pieces
  • 1 cup beer or reduced-sodium chicken broth
  • 2 chipotle peppers in adobo sauce, minced
  • 1 to 2 tablespoons hot pepper sauce

Directions

  1. In a Dutch oven, heat oil over medium-high heat; saute onion until tender, 3-5 minutes. Stir in remaining ingredients; bring to a boil. Reduce heat; simmer, uncovered, until beans are thickened and flavors are blended, about 15 minutes, stirring occasionally.
