In the spring and summer I like to eat light and fresh foods. I created this salad recipe with ingredients I normally have on hand. Serve as a side dish or salad. —Colleen Delawder, Herndon, Virginia

Sweet Pea and Radish Salad

Ingredients

  • 3 cups frozen peas (about 12 ounces)
  • 1/4 cup mayonnaise
  • 3 tablespoons heavy whipping cream
  • 2 teaspoons dill weed
  • 1/2 teaspoon kosher salt
  • 1/2 teaspoon pepper
  • 1 pound radishes, thinly sliced
  • 4 ounces dill Havarti cheese, cubed

Directions

  1. In a large saucepan, bring 8 cups water to a boil. Add peas; cook, uncovered, just until peas turn bright green, 3-4 minutes. Drain and immediately drop into ice water. Drain and pat dry.
  2. In a large bowl, whisk mayonnaise, cream, dill, salt and pepper. Stir in radishes, cheese and peas. Refrigerate at least 1 hour before serving.
