The best salmon croquettes have an exterior that's crisp and golden, while the interior is tender and moist. This recipe is rich and savory, with a slight bite from green onions.
Ingredients
- 1 large egg, lightly beaten
- 1/4 cup panko bread crumbs
- 1/4 cup finely chopped sweet red pepper
- 2 green onions, chopped
- 2 tablespoons mayonnaise
- 1 tablespoon all-purpose flour
- 1 teaspoon Worcestershire sauce
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- 1/4 teaspoon garlic powder
- 2 pouches (5 ounces each) boneless skinless pink salmon
- 1/4 cup canola oil
- Optional: Tartar sauce and lemon wedges
Directions
- In a large bowl, combine egg, panko, red pepper, green onion, mayonnaise, flour, Worcestershire sauce, salt, pepper and garlic powder. Fold in salmon. Refrigerate, covered, at least 30 minutes.
- Shape 2 tablespoon salmon mixture into 1/2-in.-thick patties. In a large skillet, heat oil over medium heat. Add croquettes in batches; cook until golden brown, 3-4 minutes on each side. If desired, serve with tartar sauce and lemon wedges.
