Salmon Croquettes

The best salmon croquettes have an exterior that's crisp and golden, while the interior is tender and moist. This recipe is rich and savory, with a slight bite from green onions.

Ingredients

  • 1 large egg, lightly beaten
  • 1/4 cup panko bread crumbs
  • 1/4 cup finely chopped sweet red pepper
  • 2 green onions, chopped
  • 2 tablespoons mayonnaise
  • 1 tablespoon all-purpose flour
  • 1 teaspoon Worcestershire sauce
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 1/4 teaspoon garlic powder
  • 2 pouches (5 ounces each) boneless skinless pink salmon
  • 1/4 cup canola oil
  • Optional: Tartar sauce and lemon wedges

Directions

  1. In a large bowl, combine egg, panko, red pepper, green onion, mayonnaise, flour, Worcestershire sauce, salt, pepper and garlic powder. Fold in salmon. Refrigerate, covered, at least 30 minutes.
  2. Shape 2 tablespoon salmon mixture into 1/2-in.-thick patties. In a large skillet, heat oil over medium heat. Add croquettes in batches; cook until golden brown, 3-4 minutes on each side. If desired, serve with tartar sauce and lemon wedges.
