Ingredients

  • 3/4 cup butter, divided
  • 1 large sweet onion, thinly sliced
  • 1 large red onion, thinly sliced
  • 2 tablespoons Worcestershire sauce, divided
  • 2 pounds ground sirloin
  • 1 envelope onion soup mix
  • 1 tablespoon salt
  • 1/2 tablespoon pepper
  • 1 package Hawaiian sweet rolls (24 count)
  • 12 slices Swiss cheese
  • garlic horseradish aioli:
    • 6 garlic cloves, roasted
    • 1/2 cup mayonnaise
    • 1/4 cup sour cream
    • 1/2 medium lemon, juiced
    • 2 tablespoons minced chives
    • 1 tablespoon prepared horseradish
    • 1 tablespoon Worcestershire sauce

Directions

  1. Preheat oven to 400°. Heat 1/2 cup butter in a large skillet over medium heat. Add onions; cook 5-6 minutes or until starting to lightly brown. Reduce heat to medium-low. Cook 25 minutes, stirring every 5 minutes. Add 1 tablespoon Worcestershire sauce, and stir to combine. Continue cooking until onions are a deep brown color and very soft, 15-20 minutes longer.
  2. Meanwhile, in a large bowl, combine beef, soup mix, remaining 1 tablespoon Worcestershire sauce, salt and pepper; mix lightly but thoroughly. On a foil-lined baking sheet, shape beef mixture into a rectangle slightly larger than the size of the Hawaiian rolls (about 9x13-in.). Bake until a thermometer reads 160°, 15-20 minutes. Set aside.
  3. In a medium bowl, mash garlic with a fork until smooth. Add remaining aioli ingredients until well combined. Refrigerate until ready to use.
  4. Reduce oven temperature to 350°. Without separating rolls, cut rolls in half horizontally; arrange bottom halves onto a parchment-lined baking sheet. Layer bottom halves with beef, caramelized onions and Swiss cheese; replace top halves of rolls. Melt remaining 1/4 cup butter; brush over rolls.
  5. Bake until cheese is melted and buns are browned, 10-15 minutes. Garnish with additional minced fresh chives, if desired; serve with prepared aioli.
